Dewees Island Chicken and Rice

Ingredients

  • One 8oz. package of Dewees Island Yellow Rice

  • 4 bone in chicken thighs (approx. 2lbs)

  • 12oz. bag of frozen green peas

  • 3 tablespoons of butter

  • 1 tablespoon of olive oil

  • 1 teaspoon of salt

  • pinch of black pepper

  • 2 cups of water


Directions

  1. Season both sides of the chicken with the salt and pepper.

  2. In a large skillet or dutch oven, heat 1 tablespoon of butter and the olive oil over med/high heat.

  3. Ensure pan is hot enough and add the chick, skin side down.

  4. Let the chicken sear for approximately 5 minutes or until the skin appears crispy and golden brown.

  5. Flip chicken and repeat for another 5 minutes.

  6. Pull chicken from pan and pour off excess grease if necessary.

7. Return pan to stove and add water, remain butter, stir in frozen peas and bring to boil.

8. Stir in rice and let boil for 3 minutes, stirring occationally.

9. Place chicken on top of mixture.

10. Reduce heat, cover and simmer for 20-25 minutes.

11. Serve immedicately!
